That ladder is ladder parkour. You go up the lower ladder and jump from the top of the lower one to the higher one when not being knocked off by zombies. You cheated by moving the ladder. Those zombies in the spider web might have died faster if you had hit them with the wooden sword instead of the random item in your inventory. ;-p
Have you seen the Minecraft recreations of the Wipeout TV show you can try to complete? Some of the better ones have a built in timer for you to track how long it takes you to do the racecourse.
